This recipe is the perfect way to start your day. It is packed with protein and fibre to help keep you full and prevent those unwanted mid morning sugar cravings. These are low carb with under 6gm per stack, gluten free and have no added sugar or nasties.
2 tbsp of Vanilla Bean Four Protein
2 tbsp coconut flour
1 tsp of vanilla essence or 1/4 tsp of vanilla bean powder
2 heaped tbsp greek yoghurt
1.5 tsp baking powder
1 tbsp of psyllium husk
1/3-1/2 cup of unsweetened almond milk
1 tsp of Natvia
1. Combine all ingredients. Add enough almond milk to create a smooth pancake mix consistency (if the mixture is too thick add some extra almond milk.)
2. Heat up 1 tsp of coconut oil in a non stick fry pan.
3. Spoon 1 heaped tbsp of mixture onto the pan and cook for about 1 minute on each side. Make sure you don't flip the pancake until bubbles form all over the surface (protein pancakes take longer to cook than standard pancakes.)
4. Serve with greek yoghurt and fresh fruit.
