This month we were lucky enough to have our guest contributor - Lilian Dikmans from Real Food Healthy Body put together her favorite & super simple Four Protein Double Choc Cookies for you guys. These are a great healthy snack idea for those who are on go that want something delish whilst keeping it all natural.
Gluten-free | Grain-free | Low fructose
1 cup raw cashew nuts or almonds
1/2 cup unsweetened desiccated coconut
1/2 cup Four Protein Raw Cacao Whey Protein Powder
2 x 20ml tablespoons raw cacao powder
1/4 cup nut butter
1/4 cup rice malt syrup
1 large free-range egg
40g dark (85% cocoa) chocolate
- Preheat your oven to 170°C (fan-forced) and line a baking tray with baking paper.
- Process the nuts in a food processor or blender until you get a fine powder. Tip the powder into a bowl and add the coconut, protein powder and cacao powder, stirring to combine. Make a well in the centre and add the tahini, rice malt syrup and egg. Mix everything together until well combined.
- Roll tablespoons of the mixture into balls and place on the lined baking tray, pressing down with your fingers to flatten. Wet your hands between rolling the balls if the mixture gets sticky.
- Bake the cookies in the preheated oven for 8 - 10 minutes or until just starting to brown around the edges. Once cool, drizzle with melted dark chocolate if desired. Store in an airtight container in the fridge.
Makes 16 cookies.
